Raw Mocha Truffles

Serves 20 truffles

Ingredients For the filling:

1½ cups whole raw cashews, soaked in cool water for 3-4 hours
¼ cup maple syrup
2 tablespoons hot brewed Beforeyouspeak Coffee
1 teaspoon vanilla extract
2 tablespoons cacao powder
¼ teaspoon sea salt

Ingredients for coating

250g dark chocolate chips or chopped dark chocolate (dairy free for vegan)
½ teaspoon coconut oil


  • Soak cashews in water for 4 hours or overnight
  • Place soaked cashews into a blender
  • Add remaining filling ingredients and blend until smooth
  • Transfer into a shallow dish and freeze for an hour or until hard enough to scoop
  • Line a tray with parchment and scoop out filling onto the sheet
  • Freeze balls until firm
  • Melt chocolate with oil in the microwave
  • One at a time, dip frozen balls into chocolate and place on parchment baking sheet.
  • Freeze or refrigerate until the coating is set and enjoy chilled.
